This salty, slightly sweet, savory, crunchy combo is the ultimate addition to salads, soups, granola or trail mix for added texture, flavor, and on the go snacking. Yield: About 1 Pound of Crunchies
1 cup halved walnuts
1 cup halved pecans
1 cup slivered almonds
¼ cup pignoli nuts
1 cup unsweetened coconut chips
1 tablespoon sesame seeds
1 tablespoon olive oil
Kosher salt to taste (I use about a teaspoon)
Add all ingredients to a skillet and stir to coat with olive oil and salt. Toast over medium heat for about 10 minutes, stirring frequently to avoid burning and ensure even toasting. Remove from heat once the nuts are toasted and golden, and continue to stir in the pan for two more minutes. Transfer to a large mason jar and store at room temperature, or the refrigerator to prolong freshness.
