All you need is four ingredients, one sheet pan, and some parchment paper. You can make this recipe in batches as small or large as you prefer. Just be sure they're roasted in a single layer on the pan. 2 cups raw walnuts (pieces, halves, or whole, whatever you prefer)
1/2 cup maple syrup
1/2 teaspoon vanilla extract
1 tablespoon coconut sugar
1 teaspoon ground cinnamon
1 1/2 teaspoons flaky salt
Preheat the oven to 325 degrees F.
Whisk maple syrup, vanilla, coconut sugar, and cinnamon in a medium sized bowl until sugar breaks down and a thick syrup forms. Add walnuts and stir to coat.
Transfer coated nuts onto a parchment lined sheet pan in a single layer. Bake 15 minutes. Rotate pan and toss nuts, still keeping them in a single layer. Bake 12 more minutes. Remove from oven, immediately toss again and sprinkle with flaky salt. Cool 5-10 minutes, break candied nuts apart. Store in an airtight container.
