Yield: 1 Loaf Banana Bread
Ingredients
1/2 cup flaxseed meal
2 1/2 cups almond flour
1 teaspoon baking soda
1 tablespoon cinnamon
3 very ripe bananas
3 eggs
2 tablespoons avocado oil
2 tablespoons coconut sugar
1 tablespoon maple syrup
1/2 tablespoon vanilla extract
1 cup blueberries (optional)
Directions
In a large bowl, whisk to combine flaxseed meal, almond flour, baking soda, and cinnamon. Place aside.
Place bananas in a large mixer bowl. Mash well with a fork. Add eggs, avocado oil, coconut sugar, maple syrup, and vanilla extract. Mix on medium-high speed until combined.
Add dry ingredients to mixer bowl. Mix on medium speed until completely combined. Use a spatula to scrape the sides of the mixer as needed. Once batter has formed, gently fold in optional blueberries.
Pour batter into a 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray and lined with parchment paper. Bake 40-45 minutes, until a toothpick is inserted and comes out clean from the middle of the loaf.
