This mojito is a total fauxjito, and has quickly become my favorite Dry January mocktail.

Fauxjito Mojito

This faux mojito - fauxjito - has become my favorite Dry January mocktail. Fresh limes, spiced syrup, and earthy mint create a beautiful balance of flavors topped with crisp ginger beer and refreshing club soda. This mocktail is so delicious, you won’t even notice rum isn’t included - I really mean it! Store any leftover syrup in a mason jar in the refrigerator, and keep this recipe on deck for your next round of Dry January mocktails.

Fauxjito Mojito

Prep Time: 5 Minutes

Cook Time: 5 Minutes

Yield: 1 Mocktail


Ingredients

1 handful fresh mint leaves

2 teaspoons Cinnamon Simple Syrup (method below)

1 tablespoon fresh lime juice

2 ounces ginger beer

4 ounces club soda

2 lime wedges


Cinnamon Simple Syrup

½ cup turbinado sugar

½ cup water

1 cinnamon stick


Directions

For the Cinnamon Simple Syrup

  1. Add all syrup ingredients to a small skillet. Bring to a boil, then immediately reduce heat to low and simmer until the sugar has dissolved, about 5 minutes, stirring periodically.

  2. Once dissolved, remove from heat and allow the syrup to sit for 20 minutes. Transfer the syrup to a Mason jar or airtight container, leaving the cinnamon stick in the jar. You can make this ahead of time. Chill until ready to use.


Make Your Fauxjito

  1. Add mint leaves, syrup, and lime juice to a highball glass. Muddle to gently mash and combine flavors.

  2. Fill glass with ice. Top with ginger beer and club soda. Squeeze 1 lime wedge and add to glass. Garnish with remaining lime wedge. Serve chilled.
