⅔ cup mayonnaise
1 tablespoon extra virgin olive oil
½ teaspoon fresh lemon juice
1 shallot, diced
3 stalks celery, diced
2 rainbow carrots, peeled and sliced into coins
2 scallions, chopped
¼ cup chopped toasted walnuts
