Vegan Date Caramel

Dates are the ultimate nature’s candy. They’re sweet, chewy, and gooey, and they have a delicious natural caramel flavor, making them the absolute perfect base for Date Caramel!


All you need to whip up this simple 10-minute recipe is dates, vanilla extract, maple syrup, a pinch of salt, creamy oat milk, and a food processor or blender.


Serve this Date Caramel alongside your favorite vegan desserts and breakfasts, over oats and fluffy homemade pancakes, and as an accoutrement on brunch boards and weekend snack spreads everyone can enjoy.

Prep Time: 5 minutes

Yield: 2 cups


Ingredients

1 pound Medjool dates (about 20)

1 ½ teaspoons vanilla extract

2 teaspoons maple syrup

Pinch flaky salt or kosher salt

¾ cup warm extra creamy oat milk


Directions

  1. Soak dates in warm water for 5 minutes.

  2. Add dates to a food processor or blender and pulse to chop. Add vanilla extract, maple syrup, and salt. Blend to combine for 1-2 minutes. Scrape down sides of bowl as needed. Slowly stream in warm oat milk while motor is running. Continue to scrape the sides as needed. Blend until the consistency is smooth and creamy. Serve immediately or store in the refrigerator in an airtight container for up to 10 days.
