This cloud bread lives up to the name. It's light and airy and so savory and delicious. It's also really simple and fun to make!

Homemade Egg McMuffins anyone?

Cloud bread is a great alternative for bread lovers (not replacement - let’s still enjoy the real thing and not feel bad about it!). It’s light and carb free, so it helps when you’re trying to eat bread in moderation, because you don’t feel deprived or like you’re really giving anything up. It’s even better the second day - chewier, more savory, and more breadlike in flavor and texture. Use Cloud Bread for dinner rolls, smashed avocado toast, sandwiches for breakfast or lunch, lobster rolls, grilled cheese, and more. Perfect for sandwiches and lobster rolls!

Prep Time: 10 minutes

Cook Time: 25 minutes minutes

Yield: 10 round buns (English muffin size)


Ingredients

6 eggs

1 8-ounce package light cream cheese

½ teaspoon cream of tartar

2 stevia packets

Directions

  1. Preheat oven to 325°

  2. Separate the egg white and yolks into to separate bowls very carefully. There can’t be any yolk in the whites.

  3. In the bowl with the yolks, add the cream cheese and stevia. Smash with a fork until smooth and combined.

  4. Add the cream of tartar to the bowl with the whites. Whisk on high speed until fluffy, sharp white peaks form.

  5. Using a spatula, very gently fold the yolk mixture into the egg white mixture just until mixed. Don’t rush or over fold, because you don’t want to break down the fluffiness of the whites.

  6. Line two half sheet pans with parchment paper. Using a large spoon, scoop the mixture into even rounds (or long ovals if you want longer rolls - see bottom image!) on the pan.

  7. Bake for 30 minutes. Allow to set for at least half an hour before serving.
