Today is Cecily’s birthday! I can’t believe this little light of ours is already two years old. Time truly flies and life sure is SWEET. That’s why, naturally, we’re doing it up today and indulging in whatever treats we want, like these Birthday Cake Cookie Dough Bites!
These cookie dough treats are no-bake, gluten free, can be made vegan, and contain no egg or raw products, making them perfectly safe for the littles to snack on (unless other allergies interfere - please see ingredient list).
Birthdays are about celebration: celebrating life, living, and the special things that bring you joy. Dessert for breakfast? Sure! Snacks for dinner? Why not! Today, we want her to enjoy whatever her precious heart desires.

Prep Time: 5 Minutes
‘Cook’ Time: 1 Hour Freezer Chill (Minimum)
Yield: 10 Bites
Ingredients
½ cup almond flour (not meal, too coarse)
½ cup gluten free flour
6 tablespoons unsalted butter or coconut oil, softened at room temperature (ratios and method are the same for either)
¾ cup coconut sugar
2 teaspoons vanilla extract
4 tablespoons oat milk
5 tablespoons rainbow sprinkles
4 tablespoons chocolate chips
Directions
Mix almond flour and gluten free flour on low speed until mixed.
Add butter or coconut oil, coconut sugar, and vanilla and cream on medium speed for 2-3 minutes, scraping the sides as necessary.
Add oat milk and continue mixing, scraping the sides as necessary.
Once a sticky dough forms, reduce to low speed and add sprinkles and white chocolate chips. Mix until combined.
Drop tablespoon sized portions onto parchment paper, and use your hands to roll into balls. Freeze for at least one hour before serving. If you’re making them ahead of time, remove from freezer 5 minutes prior to serving. Store in the freezer for up to a week.
